The Ultimate Breakfast Burrito

One of the easiest ways to quit the excuses of "I don't have time for breakfast" is to plan ahead... Failure to prepare is preparing to fail.

Check out this easy breakfast burrito recipe that can be prepared ahead of time; the easiest way is to double, triple, or quadruple the recipe to make extra burritos to freeze so you can pop them in the microwave on the go!


Breakfast Burrito Ingredients (Per Burrito)

- 1 large whole wheat tortilla (190 calories, 4g Protein, 5g fat, 32 carbs)
- 2 slices of bacon (230 calories, 7g protein, 21g fat, 2g carbs)
- 2 large eggs (144 calories, 12g protein, 10g fat, 1g carbs)
- 1/4 cup diced bell peppers (10 calories, 0g protein, 0 fat, 2 carbs)
- 1/4 cup diced onions (10 calories, 0g protein, 0g fat, 2g carbs)
- 1/4 cup diced tomatoes (4 calories, 1g protein, 0 fat, 4 carbs)
- 1/4 cup shredded low-fat cheddar cheese (110 calories, 6g protein, 6g fat, 1g carbs)
- Seasoning to taste
- Optional toppings: salsa, avocado, green chili

How To Make:

1. In a skillet or air fryer, cook the bacon until crispy. Remove and set aside. Once cooled, crumble the bacon into small pieces.
2. In the same skillet, spray some cooking oil or use a little olive oil and heat it over medium heat.
3. Add the diced bell peppers and onions to the skillet and sauté them until they become slightly tender, usually about 3-4 minutes.
4. In a bowl, whisk the eggs together until well combined and then season.
5. Pour the whisked eggs into the skillet with the sautéed vegetables. Stir gently and cook until the eggs are scrambled and fully cooked.
6. Warm up the tortilla in the microwave for about 15-20 seconds to make it soft.
7. Place the scrambled eggs and vegetable mixture onto the center of the tortilla.
8. Top the eggs with diced tomatoes, shredded low-fat cheddar cheese, and crumbled bacon.
9. Fold the sides of the tortilla towards the center and then roll it up tightly, creating a burrito shape.
10. Eat... Or wrap in foil to freeze.
