Breakfast For The Athlete Who Say's They Don't Have Time

We have all heard it, maybe even said it ourselves... "I don't have time in the mornings."

Athletes, especially high school athletes favorite excuse is "I don't have time" but is it really a time thing or a lack of preparation?



One of my favorite time saving breakfast's is egg muffins.. I started making these a few years ago when I needed something quick in the mornings to have before a training session in the summer or before I went out to go work with the athletes in the early AM.




Egg muffins are super simple to make and can be done in about 45 minutes to an hour on a Sunday before the week starts.


What you will need, and you can make these to your liking so add or replace things if you want!

  • 12-24 eggs (each egg will make 1 muffin + or - depending on how many ingredients you put in them.

  • Protein (ham, ground breakfast sausage, ground turkey, etc.)

  • Greens & Veggies (Spinach, Onion, Bell Peppers etc.)

  • Cheese (I like to use cheddar)

Preparation:

  • Mix 12 eggs in a large bowl

  • Add protein (make sure its chopped up or cooked before hand)

  • Add chopped up greens/veggies.. I usually will fry up the onion, bell peppers etc. leafy greens I will just chop and add

  • Add cheeses

  • Add spices such as black pepper, salt, etc.

Mix everything into the bowl and pour into the spaces in the muffin pan.. be sure to leave some space as the eggs will expand as they cook.


Cook Time & Temp

  • 20-25 minutes at 400

Macros

1 Egg Cup will average about 8g Protein, 3g Carbs, 6g Fat


These are super easy to reheat in the mornings in the microwave for one minute or a minute and a half!


It doesn't have to be hard to start the day off with some food, but failing to prepare is preparing to fail!
